We LOVE this! It has such a different taste. My girls (3 and 4) ask when we can have the peanut butter meat again. I've served it over tofu noodles and spaghetti noodles and it's great both ways. Thanks for the recipe!

What a family pleaser! Everyone enjoyed this. I added a little more beef broth for a somewhat thinner sauce and used broccoli instead of green pepper. Its a new regular here now - everyone actually at everything on their plate! (Oh.. I served it over rice). Thanks! *** Edited to say that I have been using ground beef for this and its wonderful! You can also put it over Ramen noodles. The kids love it!

great fast and flavorful one-dish meal! this is a keeper! i made a few changes. i used red bell pepper, garlic, red onion and broccoli for the veggies. instead of 1 c beef broth, i used 1 teaspoon beef granules with a little bit of water and used coconut milk to equal 1 c. oh, and i mixed in some red curry paste too. i topped the dish with sliced green onions and chopped peanuts. delish! thanks for a great weeknight keeper!!
Fast, easy delicious... a dependable weeknight dinner. Unlike some other reviewers, I thought that the amount of sauce was sufficient; in fact when I added the broth/peanut mixture I was afraid that I was making soup. After some simmering the sauce thickened up nicely, and coated the cooked broccoli that I added. We like heat in our Thai food, so I added some hot chili, but that is just personal preference. Thanks to the reviewer who suggested making this with chicken...I will try that next.
My family loved this. I agree with the other comments - make twice the sauce. I also used lemon pepper seasoning salt so I used half the amount. This is also very good using sliced chicken breasts and chicken broth instead of beef broth. This has become one of our favourites.
