Thank you so much! I'm always looking for new ways to use kidney beans, which I love but have so few uses for! This was wonderful! I didn't have cajun seasoning, so I made up my own from things I had in my cabinet such as seasoned salt, parsley, granulated garlic, white pepper, chili powder, and paprika. I *love* this recipe! This is going to be a wonderful, flavorful, fast and easy addition to our weeknights!

We really enjoyed this recipe for dinner last night. I did drain my beans and used a large can of diced tomatoes. It was just spicy enough and very nice for a cold rainy evening. I'll be making this one over and over. Thanks for sharing!

This was fabulous! I am also in the "why didn't I try this earlier" club? I used to prepare the red beans and rice mix from the box, but this is so much tastier and just as fast! Our only complaint is that it was a little soupy. I had drained one can of beans in anticipation of this but it was still too watery for us. Next time I will drain both cans of beans and just use the juice from the tomatoes only. Thanks so much for posting PanNan!

This is good! For a slightly different taste I've used 1 teaspoon worcestershire sauce and a couple of drops of Tabasco when I am out of cajun seasoning.

This recipe was very easy to make. I cheated and used regular beef sausage instead of turkey -- I figured all the veggies made up for the extra fat. ;-) Definitely a repeat. Try serving with Sweet Cornbread (Sweet Cornbread) for a special treat.

Easy, healthy, economical. I used kidney beans and cooked quite a lot longer. Good with couscous too.

I just realized that I have never reviewed this recipe, though I have made it and passed it on many times. I usually make it meatless and it is just fantastic. I do drain and rinse my red beans. SUPER recipe. Thanks, PanNan!!

Just writing a review for this recipe makes my mouth water! Over the past year I have made this dish so many times. It's amazing!!! We have had it as a quick weeknight meal and have even served it for company. The first time I made it I only had white beans so that is what I always use. I also add an 8 oz. can of tomato sauce. Besides those adjustments I make no other changes. This recipe is just wonderful and is even better the next day. Thank you so much!!!

This really is easy enough for a weeknight! I whipped it up one night after work, and it was tasty, delicious, and quick. I left out the bay leaf because I didn't have one, and added a can of Rotel tomatoes for a little extra spice. We'll definitely be making this again!

This was awesome! It felt good to have my 8 & 10 yr old actually say, "Thanks mom, this was great!" I didn't have and left out cajun seasoning, celery & a bay leaf. I added two fresh cut up tomoatoes, cumin & a dash of worcestershire sauce. Served over brown rice. I'll definitely make this again. It was easy, tasty, and healthy. Thanks a million!!!

This is very good! I omitted the sausage to make a nice meatless meal. I used red bell pepper and dark red kidney beans. I also rinsed and drained the beans and omitted the salt (personal preferences). We loved this! Nice little kick. Thanks for sharing!

I was quite pleased with this. I omitted the meat, didn't have celery and used my own cooked kidney beans. I usually like my red beans with Worcestershire sauce, but chose to stick with the veggies, pepper and salt flavors this time. My DH enjoyed them when often he politely declines RB&R when I make it the 'usual' way. I will do just about anything to get healthy legumes into my DH's system!

I love this recipe. I was taught a similar recipe in college but it took much longer due to the dried beans. I am happy this recipe uses canned beans. I used regular polish smoked sausage the first time and then used turkey sausage the second time. I prefer the polish sausage much more. It has more flavor. Thanks for the recipe!! I just wanted to add that my kids and hubby love this recipe I make it at least once a month!

Why I have not tried this before, I will never know. It is hard to believe that canned beans can be so good. I divided the recipe in half and we enjoyed this for dinner, the other serving will be my lunch tomorrow. I left off any additional salt and served it topped with hot sauce as suggested. A nice salad and bread made this a complete meal.

Being from the north, I wasn't sure we would like this southern classic, but I wanted to give it a try and I'm glad I did. I too added a bit more garlic and was also able to significantly reduce the amount of oil, and the blend of flavors was delicious, with just the right amount of heat. Thank you PanNan for sharing the recipe.
