Watermelon, Spinach and Feta Salad

I created this by combining ideas from several different recipes and it turned out great! Maybe you could even add in some walnuts for crunch?

  1. To make the dressing, combine olive oil, honey, balsamic vinegar, lemon juice, shallots and ginger. Mix well and place in the refrigerator in a sealed container for later.
  2. When ready to serve, prepare the salad by combining the watermelon, spinach, herbs and feta cheese. Add the dressing to taste. Toss and then add salt/pepper to taste. Serve right away.
