Watermelon Liquado (Watermelon Cooler)

  • Peel the watermelon, cut the flesh into chunks and discard any seeds.
  • Tip the chunks into a large bowl - pour over the chilled water and leave to stand for 10 minutes.
  • Spoon the mixture into a large sieve set over a bowl. Using a wooden spoon, gently push the fruit through the sieve to extract all the liquid.
  • Stir in the lime juice and sweeten with honey to taste.
  • Pour into a jug, add a generous handful of ice cubes and stir to mix. Serve in tumblers.

  1. We found this very refreshing. I did add a little more lime juice to zing it up a bit. And we found that after drinking this for a couple of days we were a little spent on it. I keep the recipe now as a summer treat to break up the juice drinking. It would make a lovely party drink too. Thank you.
     
  2. I'm not sure what went wrong, but this didn't turn out for me. First, I didn't know how big a watermelon you were using. I used 8 cups of watermelon. It sat out on the counter in a storage bag for a while. So, when I was ready to add the water, the bag already had watermelon juice in the bottom. After I added the water and let it sit and then poured it into a sieve and pushed it through, I had more than 2 quarts! The resulting mixture was very thin tasting and not at all what I expected. I'm sorry, Rose, that I didn't like your recipe. Maybe if I just used the juice from the watermelon with the juice from the meat, it will work.
     
  3. You've got to try this! These licuados are very popular in Mexico. My mom and I once sat and drank a whole pitcher of this in an open-air restaurant in a little town called Valladolid. What a way to relax! I was lucky enough to come across a watermelon recently that was so sweet and so juicy, I just scooped the flesh out with a large cookie scoop, took out the seeds, and plopped it into the blender and pureed it. Served over ice, it didn't need the water or the honey, put some lime would have been really nice. I will have to try that next time. Yummy and refreshing! I sip this, close my eyes, and I'm there . . .
     
  4. This tasted like a chilled herbal tea. I dissloved the honey in the lime juice then added it the the watermelon juice. Thanks.
