Fun treat that uses up that leftover watermelon!

- 1 1⁄2 cups watermelon, seeded and diced
- 1⁄2 cup water
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 1 tablespoon sugar
- 24 small mint leaves
- Combine watermelon, water, honey, lemon juice and sugar in a blender or food processor. Process until smooth.
- Place mint leaves in ice trays. Pour watermelon mixture into ice trays. Freeze.
This recipe is delicious and really creative. The mint leaves were very difficult to get evenly dispersed in each cube... so instead I placed one mint leaf at the bottom of each ice cube tray, so it comes out on top! This looks more uniform for my OCD-like need to have things be uniform ^^
