  • Cake: Mix all of the cake ingredients together.
  • Pour into a greased and floured 13x9 inch pan.
  • Bake at 350 degrees for 40-45 minutes.
  • Icing: Beat first three ingredients together.
  • Spread on top of cake.
  • Sprinkle with coconut and nuts.

  1. I have to give this cake 5 stars just for the nostalgia factor. As a kid in the 70's, I have fond memories of this cake from picnics and potlucks...there was always some version of it at everything for several years..Very vintage recipe...tastes just like I remember
     
  2. Excelllent cake! I made for Election Tag ;) I have to admit I omitted the coconut, DH is crazy about it and used Cool Whip for frosting.
     
  3. Wonderful cake! I had this recipe years ago. Misplaced it, and forgot about it for ages. I just came across this one recently, and fixed it for our Christmas luncheon at work. It's just as good as I remembered, and looked very festive with the green color of the pistachio pudding in the cake and frosting. As well as the coconut spinkled on top. I'm now putting this in my permanent file, hopefully never to be misplaced again! :)
