This was great. I could not find fresh asparagus, so I used frozen spears and just added them to the hot potatoes and hot dressing. That was enough to soften the asparagus to "al dente" status. The mustard dressing is definitely a keeper!
Mmmmmmm very tasty!!Just made half a recipe for the two of us, we both loved it. Couldn't find fingerling potatoes, so I cut up youkon gold in the shape of them, worked fine. We were surpirzed how well the asparagus and leek went together, nice combination and I had just enough chives left in the garden. Like the dressing very much, it had a very nice tang to it. Great keeper, thanks for sharing.
I was looking for a way to use up some leeks in the frige and so glad I picked this! Absolutely delicious and also a great way to use garden chives. I used skinny asparagus. This was perfect with grilled steak! Thanks for sharing this keeper!
Delicious and I especially liked it warm. I added two slices of crisped, crumbled bacon and a couple of ounces of grated parmesan. It just happens to be the time of year when the garden chives are flowering so adding the flowers made for a very pretty presentation.
