We served cold bruschetta at a restaurant I worked at a while ago. I decided to make it a meal at home--it really doesn't get any simpler than this!

Directions

  1. Brown chicken in a small amount of olive oil.
  2. Slice into bite size pieces.
  3. Coarsely chop tomatoes--hang onto the juice!
  4. Finely mince garlic.
  5. Coarsely chop fresh basil.
  6. Cook pasta according to package directions.
  7. Mix all ingredients together.
  8. Drizzle with olive oil.
  9. Salt and pepper to taste.
