This made a great easy and tasty light supper, and it does taste somewhat like eggs benedict! I am going to try it with the French Onion Laughing Cow Light next time.
I managed to "borrow" some fake bacon from a friend to make this recipe. Very nice breakfast sandwhich, as I like to think of it. And the cheese went well with the recipe.
