Here's a nice stuffing for Fillet of Beef. You can use Hazelnuts if you like.
- 2 teaspoons butter
- 1⁄2 cup finely chopped onion
- 1⁄2 cup finely ground walnuts
- 1 egg, beaten
- 1⁄2 bunch parsley, chopped
- 1 1⁄2 teaspoons grated orange rind
- 3 teaspoons port wine
- Heat butter over medium heat in a medium saucepan.
- Saute onions for 5 minutes or until translucent.
- Remove from heat and add remaining ingredients.
- Stuff Beef fillet and cook to desired doneness.
