These kisses will be a favorite holiday cookie of young and old. They are as light as a feather and boast a heavenly nutty flavor.

  1. Combine sugar, cinnamon, and nutmeg; set aside.
  2. Beat egg white (at room temperature) and salt at high speed of an electric mixer 1 minute.
  3. Gradually add sugar mixture, 1 tbls.
  4. at a time, beating until stiff peaks form.
  5. Fold in walnuts.
  6. Drop by teaspoonfuls onto lightly greased cookie sheets.
  7. Bake at 250* for 35 to 40 minutes.

These are wonderful. If you try one right out of the oven they are on the chewy site but once cooled they almost melt in your mouth. I love that they have no added fats other than what the nuts contain. I got 24 pieces and must say that if you want the 30 as stated you'll have to force yourself to make them quite small. These little wonders aren't overly sweet so it you like things *sweet* you might want to increase the sugar by half. They are so addicting at first bite your going to want to make a lot of these if your making them for family or guests.

I thought these were great! I'm not usually a fan of meringue style cookies, but these were much different. I ground the walnuts after toasting them lightly. These were pretty easy to make too. Thanks!

These were very good! I keep a canister of vanilla sugar (a whole vanilla bean buried in white sugar and left for a least a week) and I used that for the sugar. I also used pecans instead of walnuts because it was what I had on hand. I think I will try it with walnuts the next time. I only got 22 cookies out of the batter, but prehaps I made them a bit large. At the end of the 40 minutes, I turned off the oven and let the cookies wait until the oven was cooled before we ate them. I will keep this recipe in mind when I am planning for my Christmas bake exchange as I think it would be a welcome addition! Thanks for this recipe!
