Walnut Raisin Apple Cookies

These chunky cookies are jam-packed with goodies-from apples and raisins to oats and nuts. They're perfect for taking to potlucks. Diabetic Exchanges: 1 starch, 1 fat, 1/2 fruit. This recipe is from Amber Gregoire's. I found this recipe in Light & Tasty magazine. I have not tried this recipe, but I'm posting it for safe keeping.

These are really good! they're like eating an apple pie in cookie form. Also reminds me of an apple cinnamon cereal bar (but better than any cereal bar I've tried). With the creaming, they are quite light textured, but with that bit of crunchiness of the walnuts, chewiness from apples and a bit crispy cookie-ness on the outside. I used the margarine option and it worked out very well.

  1. In a mixing bowl, cream butter and brown sugar until crumbly, about 2 minutes.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add apple juice and lemon extract.
  4. Combine the flour, oats, cinnamon, baking soda, salt, nutmeg and cloves.
  5. Gradually add to creamed mixture.
  6. Stir in the apples, raisins and walnuts.
  7. Drop by rounded tablespoonfuls 2-inch apart onto ungreased baking sheets.
  8. Bake at 350 for 11-13 minutes or until lightly browned.
  9. Remove to wire racks.
