This goes nice on a mixed greens salad.
- 1⁄3 cup sherry vinegar
- 2 tablespoons fig preserves
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon fresh ground black pepper
- 1⁄2 cup toasted walnut oil
- Whisk together first 4 ingredients; slowly drizzle in the oil while whisking.
- Store in the refrigerator for up to one week.
- Alternatively, place all ingredients into a jar with a tight fitting lid and shake to combine.
