Walnut Cookies

"Soft little cookies that are really good and healthy, too! From Andrew Weil's Eating Well for Optimum Health in which he notes these cookies are high in Omega-3 fatty acids from the walnuts and have little saturated fat. I have changed the directions a bit from the original recipe."

  • Combine flours, baking powder, and salt with whisk.
  • In another bowl, combine tofu, olive oil, brown sugar, maple syrup, and vanilla with an electric mixer until smooth.
  • Add dry ingredients and mix until combined. Stir in walnuts.
  • Drop by teasponfuls onto ungreased baking sheets. Bake at 350 for approximately 12-15 minutes until edges start to brown.
