What I can say apart that this is a fantastic bread. The taste is evidently inviting :) I did modify a little, instead of a 50/50 ratio whole wheat flour to bread flour; I use 1/3 of the flour with wholemeal flour. And I didnt saute the onion.
A very flavorful bread with a nice crust and light texture. I did not find it dense at all. I don't like the loaves my ABM produces, so I let the machine do the mixing and kneading and finish the loaves the old-fashioned way. This made a nice rustic round loaf that rose nicely. Great with a bowl of soup. The instructions say to add the raisins, but I assumed it means the onions :)
This bread was delicious My husband really liked it. I didn't have any beer so I just used water, but it still turned out great!
I gave this bread to a friend and he told me it was very good. He did mention the texture being a little dense, but not dry. I have also seen this recipe with the addition of an egg and sugar. I'm please THIS recipe worked out nicely.
