Walnut and Raisin Cookies

ingredients
- 59.14 ml walnuts, chopped into coarse pcs
- 59.14 ml raisins
- 59.14 ml desiccated coconut
- 177.44 ml flour
- 4.92 ml baking powder
- 78.78 ml butter, softened
- 78.78 ml powdered sugar
- 1 large egg
- 2.46 ml vanilla essence
directions
- Preheat oven to 325°F/ 160°C.
- Cream the butter and sugar together.
- Add the egg slightly beaten and the vanilla essence.
- Sift the baking powder and the flour together.
- Add the dessicated coconut, walnuts and the raisins to the flour and mix with your hand.
- Now add this to the butter mix and fold gently.
- Put spoonfuls of the batter 1 inch apart into a prepared (greased or covered with butter paper) baking tray and flatten slightly.
- Bake for 20 minutes or till light golden brown.
- Cool for 5 minutes.
- Now take them out of the tray and cool completely on a wire rack.
- Store in a air tight container.

These are lovely shortbread-like cookies. I like the mild coconut flavor and the bits of chewy raisin and rich walnut. Very good with a cup of tea. They're not chewy at all- they're tender and crumbly, like I said before, like shortbread. I've never made cookies before with powdered sugar in them (at least that I can remember...) and I think that the powdered sugar gives these cookies that delicate texture. Very nice flavors- a little different from other cookies of this sort (shortbread-like that is) which are usually plainer. Mine did not turn very golden in the oven, only the bottoms did. Maybe a higher cooking temperature (maybe 350F?) would help with this?? I'm not sure. I got exactly 15 cookies from this recipe. They're rather rich tasting between the butter, nuts and coconut so that only one is quite satisfying. Very nice. Thanks for posting, Fay. :)
