We were lucky enough to have a lovely French homestay girl live with us for 5 months, this is her grandmothers recipe.

Directions

  1. Beat all the ingredients in a large bowl, more flour may need to be added if it is a wet or humid day.
  2. Let the mix rest for 30 - 60 minutes before using (on the bench, not the fridge).
  3. Place a little butter in a crepe pan , swirl until bubbly and fragrant.
  4. Add about 1/3 a cup of mix and swirl until thin and the pan is coated. Cook for about 90 seconds, flip to the other side and cook for another 30-60 seconds.
  5. Serve hot or cold.

I love pancakes and these were excellent. Quick and very easy to make with great results. I made some from my breakfast and some for my dh's dessert tonight.

Mine were filled with homemade strawberry preserves only, dh's were filled with the strawberry preserves , garnished with a little icing sugar and drizzled with lemon curd. Can you say decadent, but oh so good. Thank you for sharing this lovely treat. Made for ZWT8 - France.
