Waldorf-Astoria Chocolate Cake

"As a child, my mother told me that this was considered to be JFK's favorite cake recipe. I know it became my choice for birthday cake every year. Today I substitute Splenda blend for the sugar and double sift the dry ingredients to make it fluffy. You cannot further reduce calories by using any of the light mayonnaises. if you do not have or like miracle whip, you can substitute regular mayonnaise with no change in quality."

directions

  • sift dry ingredients together into a large mixing bowl.
  • Add moist ingredients and mix until well blended.
  • Pour into a well-greased loaf pan.
  • Bake at 350 for 45 minutes.
  • if you double, bake in well-greased bundt pan for 90 minutes. Allow to cool in pan before turning out or top will separate from the cake.
  • Dust with powdered sugar bfore serving.

  1. About 45 or 50 years ago, the mother of a close friend asked for the recipe after enjoying dinner with her husband at the Waldorf. She was given a copy of the recipe and he got an unexpected healthy surcharge on the bill. She responded by distributing the recipe to anybody and everybody who was interested. The recipe differs from this one in its reference to mayonnaise, not specifically "Miracle Whip"; by 1 1/2 t. baking powder as well as the baking soda; 2 t. vanilla, not 1; 1 t. salt; and only 35 minutes of baking time. Experiment with these differences and make the recipe your own. :}

I am a 51 yo full time employed registered nurse and mother of 2. I have always loved to fuss in the kitchen. As a teenager, I sat myself down with pen and pad and wrote down all the recipes for the ethnic comfort food my grandmother had committed to memory over the years. I'm pround to say I can replicate many of those seasoned favorites and included them in a small cookbook I put together for my 2 brothers wives as a shower present. I grew up on Betty Crocker as my mother's manual (she had a copy of the original red and white volume) and have always found Joy of Cooking too fussy. My all time favorite cookbook is the original New York Times Cookbook. I discovered it in my teens and zealously guard it. I have my own extensive cookbook collection and am always on the lookout for new and creative ideas. I recently had a gastric bypass and have reached my goal weight so my cooking choices now reflect a new, healthier consciousness. <br> <br>Please, anyone trying my recipes, leave me a review.
