Meatballs in a Pineapple Sauce

  1. In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk.
  2. Shape mixture by rounded tablespoonfuls into meatballs.
  3. Bake at 350 for 30 to 35 min.
  4. In a small bowl, combine the cornstarch, sugar, reserved pineapple juice, vinegar and soy sauce. Mix until smooth, then pour into skillet.
  5. Cook, stirring constantly, until mixture thickens and boils, about 5 minutes.
  6. Stir in the meatballs and green pepper and pineapple chunks. Heat through.
  7. Serve over rice.
