I cut the recipe in half (just 2 of us) but made the full amount of the compote! Served 2 waffles the first time around & froze the other 4 (as much as anything else to see how that would work out) & the waffles with the compote were sensational! Definitely a winning recipe, we thought! And, although you might already know it, the compote goes very nicely over some vanilla ice cream! Thanks for this great recipe!   1. Compote: In a small saucepan, combine peaches, orange juice, brown sugar and cinnamon. Bring to a boil.
  2. Add berries. Cook and stir for 8 minutes or until thickened. Set aside.
  3. Waffles: In a large bowl, combine flours, flaxseed, baking powder, baking soda and cinnamon.
  4. Combine the buttermilk, orange juice, oil and vanilla; Stir into dry ingredients just until moistened.
  5. Cook in a preheated waffle iron until golden.
  6. Serve with compote and enjoy!
