It wasn't the diabetic-friendly recipe that was the draw here but the peach & passionfruit, so I wasn't concerned when I used a pure maple syrup & a peach yogurt! Also made my own waffles rather than using the frozen ones! Still, the important thing was the flavor combo from the fruit over a nice warm waffle, & that's what we got! Great way to start a morning (or late morning, or . . .)! Will do this again, for sure! Thanks for sharing the recipe! [Tagged & reviewed in Make My Recipe Tag]

Ingredients Nutrition

  • 2 frozen waffles (Nanna's Original specified)
  • 8 peach slices (in juice drained)
  • 2 passion fruit (halved pulp removed)
  • 2 tablespoons vanilla beans, fruche
  • 1 tablespoon maple syrup (sugar-free)

  1. Toast the waffles until golden brown and put on plates.
  2. Top with peach slices and spoon the passionfruit pulp over and top with the Fruche and drizzle with maple syrup to serve.
  3. VARIATION - replace the Fruche with any low-fat or diet flavoured yoghurt and the peach with any canned fruit in juice.
