This makes one waffle or two pancakes but can easily be increased. Beating the egg whites makes the whole wheat waffle light & fluffy.

  1. Beat egg white until stiff.
  2. Set aside.
  3. In a separate bowl, whisk together water and powdered milk.
  4. Add egg yolk.
  5. Add flour and baking soda.
  6. Fold in egg whites.
  7. Bake according to waffle iron directions.

Stiff egg whites did not make this recipe light and fluffy. It was heavy and bland and tasted more like tough wheat biscuits. I used a good whole wheat pastry flour, but clearly a few ingredients were missing to make it tasty. Still on a quest for a good waffle recipe.
