Awesome recipe! I've only had pollo tonnato so far because it's difficult to get organic veal here, but now I got it and just had to make this.<br/>Followed the recipe to the letter except that I used the cooking broth instead of the milk, just because I was out of milk, and it still tasted great. The mayonnaise was home made. For weighing down the meat, I used the stones which I use for weighing down sauerkraut in jars. This is definitely a keeper for summer days, we absolutely loved this dish! Thanks for sharing :)<br/>Made for A Diabetic Summer Trip / Diabetes Forum June 2013
