- 400 g whole wheat flour
- 100 g white flour
- 2 teaspoons salt
- 30 g flax seeds
- 1⁄2 teaspoon coriander
- 1⁄16 liter milk
- 250 g plain yogurt
- 40 g fresh yeast cakes
- 1 teaspoon sugar
- 30 g flax seeds
directions
- Mix whole wheat flour and white flour together with 2 teaspoons salt, 30 gr. flax seed and 1/2 teaspoons coriander.
- Mix milk and joghurt together in a saucepan and warm. Add yeast and sugar, stir until completely combined.
- Pour milk mixture, little by little into flour and knead thoroughly. The dough will be very firm. (I ended up adding about 50ml more milk).
- Let dough rise, covered, in an oven set at 30°C for 2 hours. After 2 hours punch the dough down and knead once more. Form into a round loaf.
- Brush the loaf with water and sprinkle with the remaining flax seed. Press softly into dough.
- After you have shaped the dough into a loaf preheat the oven to 200°C Bake the bread on the middle rack for 50-60 minutes.
- This bread is very crusty.

I was born in Canada, lived on Cape Cod for 13 years and then moved to Florida. While in Florida I met my wonderful German husband and moved to Germany after just knowing him for 2 weeks. We have been together now for over 20 years. I am very lucky with him, as I love to cook and he loves to eat! I enjoy trying new recipes out on friends.
My particular passion, apart from cooking, is running. I only started running about 3 years ago and am not very fast, but can't imagine my life without this sport.
We both enjoy travelling, jogging, reading and cooking. We are also wine lovers and living in Germany there are lots of wine festivals - which include food galore - to attend. We love trying the local dishes and wines in the countries we travel to.
We have an adorable 12 year old granddaughter (from my husbands first marriage) who loves to bake "American" muffins with me.
