From registered dietitian Zonya Foco.
- 1 cup reduced-sodium chicken broth
- 3⁄4 cup evaporated skim milk
- 1⁄4 cup white wine
- 1⁄2 cup cornstarch
- Mix all ingredients together.
- Saute with your favorite vegetables; let simmer until thick and bubbly, about three minutes.
This sauce was quick and delicious. I enjoyed it over high fibre pasta and some sauteed mushrooms. Yum! I thought that the amount of cornstarch sounded awfully high but it worked just fine for me as listed. Made for my adopted chef for Fall PAC 2011. Thanks FLKeysJen! :)
This sauce has a very nice flavour but I found it to be far too thick. I had the sauce, made as written, with cauliflower. I separated half of the sauce and added grated cheese for DD. She enjoyed the resulting cheese sauce but also found it to be too thick.
