The mojito is a cooling effervescent coctail inspired by Havanas's blithe lifestyle in the 1920's. While Hemingway's Cuba is long gone, it's spirit lives on in the sparkling blend of sugar, mint and lime. Adapted from the Seattle Post Intelligencer. Caribbean, Mexican, Southern, and Western.
In a 8-12 oz. glass, with the back of a spoon, mash the berries, lime wedges, mint and sugar until well blended. You can remove the mint, or alternatively, blend the berries, lime juice(from wedges), mint and sugar in a blender.

Add crushed ice, a splash of lime juice and club soda to fill the glass.

Shake. Garnish with a lime wedge. Serve and enjoy!
Was this ever refreshing! I must have made this several times in the last few days. I definetely used alot more raspberies, and I used the blender to crush and blend everything together. Raspberries and mint do go well together.

DD and I had this for a fun bevy today -made exactly as directed, except we "cheated"and blended step1in the blender instead of with a spoon (we didn't know how to get the mint small enough otherwise? Maybe was supposed to be muddled and remove the pulp?). we also added a bit of crushed ice to that and then blended- then poured this mix into the glass, added regular crushed ice, then stirred in the soda and garnished. VERY fresh and refreshing!! Will make again!! ZWT3.
