Fantastic recipe! Really easy. I made half with shrimp, half with salmon and they were a big hit at a potluck. Best part is these are gluten-free and dairy-free. Used the leftover ingredients to make pho. Will definitely make again.
I used shrimp instead of the salmon. I've eaten it with tofu also.
I have had this marked to try for so long and thanks to the *Pool Party* in the Diabetic Forum I finally got it done. I used fresh basil and baby bok choy in place of the lettuce. This was served with sweet chili sauce and Baby Bok Choy Salad.
These are yummy!! I omitted the mint and used some smoked salmon (the kind in sheets) that needed to be eaten. Great lunch!!
Liked it but wasn't crazy about the mint. My wife really enjoyed it though. I'd make it again but without the mint. Nice technique with the pie pan, that worked great.
Added sliced avocado, mushrooms, cucumber shreds and used soy and wasabi. Great!
