Vietnamese Spring Rolls

"These spring rolls were a sell out at one of our annual school projects several years ago and have been a favorite at our house as well as at the Spring Mosaic. A Jean Pare recipe from "Company's Coming Asian Cooking" and one that never fails to please. Make for wonderful appetizers."

ingredients

  • 1 lb ground lean pork
  • 1 cup carrot (finely grated)
  • 12 cup rice vermicelli (cooked)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 minced garlic clove (or 1/4 teaspoon garlic powder)
  • 1 teaspoon finely chopped gingerroot (or 1/4 teaspoon ground ginger)
  • 2 green onions (finely chopped)
  • 1 large egg (fork beaten)
  • 25 spring roll wrappers (6 inch size)
  • cooking oil (for deep frying)

directions

  • In large bowl add first nine ingredients mixing well.
  • Place about 2 tablespoons filling in centre of each spring roll wrapper.
  • Fold bottom corner up over filling, fold in both sides.
  • Dampen edge of wrapper and roll tightly to seal
  • Repeat with remaining filling and wrappers.
  • Deep fry in hot (375 ) cooking oil in large wok or deep fryer for about five minutes, turning at half time, until golden.

  3. A recipe that will become a new favorite at our house. Easy to make up and so delicious. I used wonton wrappers as that was all I could find in the stores so ended up with many more rolls as being about 60,which is great since I will be serving them during the holidays as appetizers. In one batch I used half mild Italian sausage and some fresh ground pepper and they were delicious. Paired with Recipe#305758. So happy I found this recipe and it is another winner Gerry.

  1. I used rice in place of the vermicelli and then followed the rest of the recipe. We loved them!
     
  2. Yum, Yum and Yum I made these as is except I am not a big fan of vermicelli so I slightly softened some bean sprouts and made with these instead. Also I just used the wrappers I had on hand which were much larger than 6 inches so it made about half the servings which I knew would be the case. I also adjusted some of the filling amounts just to suit our taste. What can I say these were so good the filling was awesome we all really enjoyed them. I know why you use the smaller wrappers now, so there is more I know mine were bigger but they went so quick and I could have done with extra. I paired these with your Recipe#305758 they went really well together. A company worthy affair, these would be the perfect appetizer on an Asian night, to serve something really good for my guests to munch on while I was finishing up the main affair. Gosh I bet this is so long sorry they really were just so good thanks very much Gerry 999!!!

Homemade of course! <br /> <br />I love preparing meals for my family and friends and in the sharing of good recipes be they mine or that of another. My posted recipes are recipes that are family favorites. My reviews here on Zaar allow that I have been most fortunate in the choosing of the recipes I have made. Without doubt we all love those over the top desserts and dishes to serve on special occasions and for those fives are a given. For me equally important are the recipes used in the daily meal preparation. Recipes enjoyed by my family be it a simple soup, salad or casserole are right up there with the 'over the tops' and share equal billing. Yes five star ratings ... if my family enjoyed, I would serve to invited guests, take to a pot luck, coffee hour or bake sale. <br /></p> <p>Aside from cooking and baking I admit that my interest in gardening exceeds that of the norm. I collect cookbooks, my favorites being the community and church cookbooks that have everyone sharing their favorite recipes. Enjoy yard sales on occasion but tend to keep my hands in my pockets, cannot completely resist when it comes to the glassware, baskets and of course cookbooks. I take great pleasure in reading with non fiction being my first choice when it comes to the choosing.</p>
