ingredients

• 4 eggs
• 2 cups sugar
• 1 1⁄4 cups vegetable oil
• 2 cups flour
• 1 teaspoon salt (optional)
• 2 teaspoons baking soda
• 2 teaspoons cinnamon
• 3 cups grated carrots
• butter, for greasing bundt cake pan
• 8 ounces softened cream cheese
• 1⁄4 lb butter
• 6 cups confectioners' sugar
• 2 teaspoons vanilla extract

directions

1. Beat eggs. Add sugar and beat until well blended. Add oil and all other dry ingredients; beat until mixed. Last of all add carrots.
2. Grease and flour a "bundt" pan and pour cake batter into it. Bake in preheated 350 degree oven for 40 minutes or until inserted toothpick comes out dry.
3. For frosting mix cream cheese and butter; add sugar and vanilla. Beat until smooth. Frost cooled cake.
