Vicki's Ham Loaf

"This recipe was given to me by a cousin on our visit to Nebraska. It's a nice change from the traditional meat loaf. You can grind up your own ham from leftovers or the local butch will do it if you ask."

directions

  • Mix loaf ingredients together well. (Using your hands seems to work best, I slip a plastic bag over my hand to keep clean.) Shape into 2 loaves and place on jelly roll pan.
  • In small bowl, mix together sauce ingredients and spread evenly over loaves.
  • Cover loosely with foil and bake @325 for 1 hour. Uncover and bake an additional 20 minutes.

I reside with my husband and three children in the Willamette Valley of Oregon. We keep busy on our nursery and like to spend free time in the pool, at the sand dunes with our ATVs or geocaching with the kids. I'm always looking for new recipes to add to our regular rotation, so this site is wonderful!
