I have used many recipes but this is by far the easiest of them all. Super moist which is what I was looking for! I don't like messing with recipes by omitting or substituting but I made 2 changes. I used pecans instead of walnuts, 1 1/2 cups of sugar instead of 2 and 1/2 stick of soft butter instead vegetable oil. OMG! ??? LOVE IT! It browned beautifully and I cut the baking time by 8-10 minutes. Thanks for sharing!!!
Loved this recipe. Just made two loaves for the holiday season. My oven cooked them in about 40 minutes and very moist but cooked through. I also just added vinegar to milk to sub for buttermilk. When I added the soda it didn't foam much at all but didn't affect the turn out. I also added a little fresh orange, Marengo, ginger, cinnamon and nutmeg. Subbed walnuts for pecans. Huge hit and great for this time of year. Thanks to the contributor!
Incredible! This was my first attempt at making any kind of cake/bread, my husband suggested it. I followed the advice of turning the banana black by putting it in a freezer and then in a fridge overnight and it worked great. Also added cinnamon but couldn't really taste it, and I used less pecans, chopped them into smaller pieces and added chocochips as well. I also used one egg and not one and a half as the recipe for one loaf suggested, and baked it for 50 instead of 60 minutes to retain moisture. EXCELLENT turnout and has given me a lot of confidence!! :D :D <br/>My husband loves to spread a layer of Nutella and strawberries over each slice, thought some of you would like to try that, it tastes amazing!
To make it a little healthier but still moist, I used about a half cup of applesauce and then topped off with oil to make the 3/4 cups. Because of using the applesauce, I cut the sugar back to 1 1/2 cups. It still was rather sweet though. I wish I had reduced it even more. The results were a moist, dense bread with plenty of banana flavor. I liked the use of pecans instead of the traditional walnuts. I used two 9x5-inch loaf pans. I wish I had used 8x5 as the loaves weren't as high as I like them.
So moist and better than any I've ever bought from a bakery. I did make a few minor changes: I used half white sugar half brown sugar, I used 5 bananas-they had black dots all over but were not totally black as mentioned. I also used water instead of milk cuz I had no milk on hand and it came out amazing!!! I did not mix by hand- I combined dry ingredients in a bowl and put it aside, then starting with the bananas, I used a standing mixer, added all wet ingredients then added the dry ingredients 2 cups at a time until all was well combined. I did crush my own walnuts so the pieces were a little chunky which I didn't like so next time I will buy crushed walnuts. This recipe made me 2 mini loaves and 12 muffins. So if you're not making for a lot of people be prepared to freeze some or cut the recipe in half. Perfection!! Oh, and do not over cook it as it will lose its moistness.
Best I've ever eaten. I had two very ripe bananas, so I put three not-black-enough bananas in the freezer last night. When I took them out this morning, they looked like very cold artificial fruit, but when they defrosted they were black indeed. They were so liquidy I had to squeeze the fruit out, and I was really worried that I would ruin the ingredients. But, the hint about fast ripening I got on the internet really worked out for cooking purposes. I did use buttermilk. I followed the recipe to the letter, except baked only 55 minutes. I'm going back for my third slice. Shameless!
My daughter-in-law and I have made this recipe with a gluten free flour blend,and it comes out Wonderful.
This is, hands down, the BEST banana nut bread recipe I have ever found! So moist and yummy. My bf absolutely LOVES this! He's a truck driver and every time he comes home he has to have some, along with some to take with him lol. Awesome recipe!
