For healthy, a great choice; for taste, not quite great, & I did follow the recipe right on down! I'll do them again, another time, & then I'll take tips from several others who've made them ~ I think adding some toasted wheat germ would add to the flavor, as would some dried fruit (as in those dark raisins that I enjoy so much)!   1. Chop apple and pour Splenda over, let sit 10 minutes.
  2. Add applesauce, egg white and vanilla.
  3. Combine dry ingredients and add to apple mixture.
  4. Spoon into muffin pan sprayed with cooking spray.
  5. Bake 20-25 minutes in a preheated oven set at 350°F.
