This recipe is from my church's cookbook. It is so simple, but rivals any other pancake recipe I've tried, and I've tried quite a few!
- 2 cups flour
- 2 cups milk
- 2 eggs
- 1⁄4 cup oil
- 4 tablespoons baking powder (or 1/4 cup)
- 1 teaspoon salt
- Mix all ingredients very well and fry on a hot griddle or frying pan which has been lightly greased.
- You can make 8 large (6" diameter) pancakes by dropping by 1/2 cupfulls or 16 smaller pancakes by dropping by 1/4 cupfulls.
- I have success by cooking them on medium-low heat and flipping when they look dry around the edges.
