This Pot Roast is very easy to make and it smells great cooking! This goes very well with mashed potatoes, but if you do not want to make mashed potatoes, you can add potatoes to the crock pot while the roast is cooking. I would suggest using low sodium cream soups and also low sodium broths because the mushroom/onion soup mix can make the gravy slightly salty.
- 3 -5 lbs roast
- 2 cans cream of mushroom soup
- 2 cans beef broth
- 2 packets mushroom soup mix or 2 packets onion soup mix
- 1 beef bouillon cube
- 3 cans mushroom pieces, w/juice
- 1 medium onion, cut into pieces
- Mix Soups together in Crock Pot.
- Add the rest of the ingredients to Crock Pot.
- Mix everything together.
- Cook on High for 5-6 hours.
Very easy- I agree that it makes lots of gravy so I'm sure 1 can each of the soups would be sufficient. I only put in 1 pack of the onion soup mix & found that too much. I would maybe just use 1/2 pack next time. Very tasty!
EASY sure is a good way to describe this pot roast. It's not fancy but it's tasty, and wonderful for an 'after-work' dinner. I used just one package of the onion soup mix and one can of mushrooms. I think that one can each of the mushroom soup and beef broth is sufficient for this as I ended up with a LOT of leftover gravy, which I saved because it's so delicious. This was so easy to throw in the crock pot in the morning (when I'm half asleep and can't follow anything complicated!). House smelled great when I got home from work. Thanks Kristen, my family loved it and it's a keeper!
