  1. Sauté onions in oil until tender.
  2. Add macaroni, cheddar cheese, and parsley.
  3. Mix milk, cottage cheese, salt and pepper until smooth; mix well.
  4. Add to macaroni mixture, mix well.
  5. Pour into a greased 2 qt casserole.
  6. Bake, uncovered, at 350* for 25 minutes.

Inez, this was very good. I was a little leery about the cottage cheese, but it provided a pleasant tang to the overall flavor. The minced onion was a nice addition also, although next time I think I'll cut back on the amount. Very creamy and cheesy and it definately deserves a spot on my top ten favorite mac and cheese recipe list!

This is a great recipe for Mac and Cheese and it isn't loaded with fat like so many of them are. I put it together as stated except for two minor changes. First, I put the cottage cheese mixture in the blender and made it really smooth before mixing everything together. Second, I sprinkled about 2 oz. of shredded extra sharp cheddar on top before baking. As a result, I wound up baking it about 15 minutes longer to brown the cheese. It was delicious and I know we will enjoy this recipe often. Thanks for posting it!
