ingredients
- 1⁄2 cup margarine, melted and cooled
- 1 cup milk
- 2 teaspoons grated lemon peel
- 1 teaspoon vanilla or 1 teaspoon almond extract
- 2 eggs
- 2 1⁄4 cups flour
- 1 cup granulated sugar
- 4 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup blueberries
- 1⁄2 cup raspberries
directions
- Preheat oven to 400 degrees F.
- Grease standard size muffin pan cups.
- In a small bowl,whisk together margarine,milk,grated lemon peel,vanilla and eggs.
- In a large bowl stir together flour,sugar,baking powder and salt until blended.
- Make a well in center of dry ingredients and add wet ingredients,stirring just until combined;Fold in berries.
- Divide batter equally among prepared muffin pan cups.
- Bake 20 minutes until golden colour or until toothpick inserted in center comes out clean.
- Let sit 10 minutes before removing from pan;Cool on rack.

Delicious! I used frozen berries, as the fresh aren't available in my area yet. The lemon zest added just the right combination of flavors with the berries. The only addition I made was to sprinkle a little crumble topping on the muffins (I had extra topping left from another recipe). This recipe made fifteen regular-sized muffins for me. I will definitely be making these again and again---Thanks Boyz 5!
