  • Preheat oven to 400 degrees F.
  • Grease standard size muffin pan cups.
  • In a small bowl,whisk together margarine,milk,grated lemon peel,vanilla and eggs.
  • In a large bowl stir together flour,sugar,baking powder and salt until blended.
  • Make a well in center of dry ingredients and add wet ingredients,stirring just until combined;Fold in berries.
  • Divide batter equally among prepared muffin pan cups.
  • Bake 20 minutes until golden colour or until toothpick inserted in center comes out clean.
  • Let sit 10 minutes before removing from pan;Cool on rack.

  1. Delicious! I used frozen berries, as the fresh aren't available in my area yet. The lemon zest added just the right combination of flavors with the berries. The only addition I made was to sprinkle a little crumble topping on the muffins (I had extra topping left from another recipe). This recipe made fifteen regular-sized muffins for me. I will definitely be making these again and again---Thanks Boyz 5!

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time,when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
