Make and share this Vermont Maple Oatmeal Pie recipe from Food.com.
- Unroll pastry into a 9-in. pie plate; flute edges. In a large bowl, combine the eggs, sugar, flour, cinnamon and salt. Stir in the oats, syrups, butter and vanilla; pour into crust. Sprinkle with coconut.
- Bake at 350° for 50-60 minutes or until set. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack. Serve with ice cream if desired. Refrigerate leftovers. Yield: 8 servings.
Can't believe I'm the first to review this awesome recipe. It was so quick and easy and the taste of the maple, oatmeal and coconut - sooooo good. It does make a lot of filling though, much to much for my 9" pie shell, but that was no problem. I just filled a small ramakin and baked the same and we had dessert, minus the crust and carbs. I love all these flavors. Topped ours with fresh whip cream and it came out firm and wonderful blend of flavors but not to sweet. Made for Fall Rookie Recipe Tag Game, but it won't be the last time I make it.
