Venison (Or Beef) Stew

This rich stew is infused with the flavors of white wine and dill. It's a hearty and comforting meal by itself, but is wonderful with salad and fresh rolls. I really like this made with venison-the meat is so lean.

  1. Combine flour, salt and pepper in a shallow bowl.
  2. Coat meat with flour mixture.
  3. Brown meat in oil in a dutch oven or heavy-bottomed stockpot. (I like my meat very browned).
  4. Add the onions and garlic and cook till tender.
  5. Add hot broth to browned meat, scraping bottom of the pan.
  6. Add all remaining ingredients.
  7. Simmer slowly till veggies are tender.

Wow...this was really good. Being from Wisconsin I had to add some butter to the recipe. I added a half stick of unsalted butter to the olive oilused to brown the venison. In addition I sauteed a half pound of thickly sliced baby portabella mushrooms in a small pat of butter for 10 minutes and then added them to the stew and switched out the diced potatoes for halved fingerling potatoes. This is definitly the dish for all those who claim they don't like Venison!

Excellent stew! I had saved this recipe because we have some venison in the freezer, but I discovered I don't like the taste of it (gamey) so I'm really glad I made this with beef (round steak) instead. I had less than two hours to make this for dinner and it came out perfectly. I halved the recipe (next time I'll make the whole batch), used unpeeled red potatoes, and added celery, as well as a teaspoon or so of worcestershire--next time I'll cut the salt or dilute the beef broth since it was just a touch salty. I didn't have wine or parsley but it didn't need them. I couldn't taste the dill so I'll add a bit more next time. The floured meat stuck to the pan quite a bit (I might have had it up too high), but in the end, it turned out fine. Really wonderful flavor and texture--this is going to be my standard stew recipe--thanks for posting it!
