i added a lg. clove garlic,only one lg. carrot(more and you would have tasted only carrot) used milk instead of cream, add liquid with caution as there is too much liquid, also used 1 medium onion

Velvet-smooth it is! Loved the the texture. This a comforting, tummy-warming soup. I made it just as written, but added a little garlic and garnished with green onions. I will make this again for sure. Thanx for a great soup recipe.

We really enjoyed this soup. I was looking for a creamy potato soup that didn't have thickeners adding extra calories, and this fit the bill. I sued 1/2 C each half & half & 2% milk. Great with sammies or even a hotdog! Thanks a bunch, it's a keeper DancingCook.

Yummy yummy for my tummy! Perfect for a cold, rainy winter day (which is what the day was like when I made this) I ,too, added one large clove of garlic and the seasoning was perfect. I like my soup on the soupy side so I blended well with an immersion blender and added some extra milk. Hubby and kiddo loved it!

This was great! I substituted the heavy cream for 1 1/2 cup whole milk and added 1/4 tsp fresh thyme leaves and 2/3 lb cubed boneless ham, then doubled the recipe. When serving, I threw a pinch of shredded sharp cheddar cheese into each bowl. My husband, myself and my 5 children loved it! When it was time for bedtime snack, they finished it off!

Wonderful! Made this last night, followed the recipe exactly except I only had two cans of Chicken Broth, which equalled a little less then four cups of liquid. Everything else was the same. Turned out great, loved the texture, and it didn't need anything else, no bacon, no chives, no sour cream. It was perfect just the way it was. Thanks DancingCook, we loved it!

When I got this recipe, my fiance repeatedly asked me to make it. Am I glad I did - it is so very good! My kids (even the fussy one) all loved it. Great way to get them to eat their veggies. Thanks for a simple, effective recipe. My only suggestions are to add a little garlic (If you like it), and maybe garnish with a dollop of sour cream. MMM

Excellent! Very easy and fresh tasting! Will definitely make frequently! I used 1% milk instead of heavy cream.
