- 2 chicken breasts
- 3 teaspoons cornstarch, divided
- 1 tablespoon soy sauce
- 2 tablespoons oil, divided
- 1 (4 ounce) can mushrooms
- 2 garlic cloves, minced
- 2 teaspoons ginger, crushed
directions
- Cut the chicken into match stick like pieces.
- Toss with 2 teaspoons cornstarch, soy sauce and 1 tablespoon oil.
- Let stand 10 minutes.
- Mix remaining cornstarch with mushroom liquid.
- Add remaining oil; heat.
- Add chicken, garlic, and ginger.
- Cook for 1 minute, stirring constantly; do not let the chicken brown.
- Add mushrooms.
- Add liquid.
- Cook for 5 minutes until thickened; do not overcook.
