  • Cut the chicken into match stick like pieces.
  • Toss with 2 teaspoons cornstarch, soy sauce and 1 tablespoon oil.
  • Let stand 10 minutes.
  • Mix remaining cornstarch with mushroom liquid.
  • Add remaining oil; heat.
  • Add chicken, garlic, and ginger.
  • Cook for 1 minute, stirring constantly; do not let the chicken brown.
  • Add mushrooms.
  • Add liquid.
  • Cook for 5 minutes until thickened; do not overcook.
