  • 3 cups regular yellow cornbread mix (not plain cornmeal) or 3 cups Jiffy corn muffin mix (not plain cornmeal)
  • 2 cups creamed corn
  • 2 (4 ounce) cans chopped green chilies
  • 1 (12 ounce) package Velveeta pepper jack cheese, grated
  • 3 eggs

  • Mix all the ingredients together and pour into a 9X13 baking dish sprayed with baking spray.
  • Bake at 400 degrees for 30 minutes. Cool in pan and slice into 12 equal squares.
  • This cornbread is like a thick, moist, spicy cake. It is delicious served hot and drizzled with honey.
