So simple and so flavoursome. I scaled back for 2 to 4 serves and the DM and I just coudn't quite finish it all (had about 3/4 cup left but that said I did add nearly another cup of vegie stock (homemade - didn't worry about the water just used all vegie stock) and was worried I was going to end up with a vegie stew rather than a soup but the end result was fantastic, I partially blended with the stick blender which gave it a creamy taste without the cream and was thoroughly enjoyed by the DM and myself (DM prefers pureed soups but I prefer chunky so it came close to suiting us both). The only change I would make is to use maybe other vegies, I restrained using some zuchinni for instance so I can see this as being one of those soups well you could just add those little extras you may have left in the vegie draw so to speak. Thank you I Appreci8t good food!, made for All You Can Cook Buffet - Special Event.
