Veggie Split Pea Soup

  • In a large pot add at low-med heat cook onions and garlic until transparent.
  • Add a little water as the time passes so the onions wont brown or crisp.
  • Add water/broth combo, spices and then add celery, carrots and peas.
  • Bring to a boil.
  • Reduce heat to a simmer for 1 to 11/2 hours - until peas are soft and mushy.
  • Remove the bay leaf.
  • Cool slightly.
  • Puree in a blender for a smooth soup or leave as is.

  1. Tasty and filling. I made this as written but I increased the spices. I partially pureed the soup to thicken a bit, but yet still have some texture. This proves that you don't need bacon or ham to have a wonderful split pea soup. ;) Thanx for sharing!
     
  2. So simple and so flavoursome. I scaled back for 2 to 4 serves and the DM and I just coudn't quite finish it all (had about 3/4 cup left but that said I did add nearly another cup of vegie stock (homemade - didn't worry about the water just used all vegie stock) and was worried I was going to end up with a vegie stew rather than a soup but the end result was fantastic, I partially blended with the stick blender which gave it a creamy taste without the cream and was thoroughly enjoyed by the DM and myself (DM prefers pureed soups but I prefer chunky so it came close to suiting us both). The only change I would make is to use maybe other vegies, I restrained using some zuchinni for instance so I can see this as being one of those soups well you could just add those little extras you may have left in the vegie draw so to speak.
