Filling and healthy veggie pitas.
- 1 pita bread
- 1⁄2 red bell pepper
- 1⁄2 yellow bell pepper
- 1⁄4 white onion
- 1 cup lettuce
- 3 tablespoons hummus
- olive oil flavored cooking spray
- 1⁄2 teaspoon garlic
- 1⁄2 tomatoes
- In a frying pan, grill sliced peppers, onions & garlic with olive oil cooking spray, salt and pepper to taste.
- Slightly toast pita bread, spread hummus, stuff with pepper & onion mixture, tomato & lettuce.
The chef must have really big pitas- I don't know how you can fit this many veggies on one! But despite the bread falling apart, it tasted absolutely terrific. I used recipe#233088. Glad I made it! Thanks for posting!
