Vegan, gluten-free, no added sugar - delicious comfort food! I do all the slicing and dicing early in the day so I can easily throw the meal together in the evening.
- Heat the oil in a wok. Add the onion and cook until translucent. Add the potato and fry until just beginning to brown.
- Add in the remaining veggies. Stir fry until cooked but firm.
- Crumble the tofu over all and then cook until heated through.
- Serve immediately!
