This is NOT vegetarian as it contains chicken broth. to be vegetarian, you would need to replace the chicken stock with either water, or some kind of vegetarian alternative such as vegetable broth.
Very very good! Only difference Id make is a little trick I learned from my great grandmother. Simmer the hollowed cut side in a little bit of water for a few minutes in a frying pan to cut back on the strong flavour of the bell peppers. Its usually too strong for me and with there being no meat in them itll help balance out the flavors. :)
We just made a more vegetarian-friendly version of these using 1) vegetable broth instead of chicken broth, 2) half the rice, 3) 1 can of drained great northern beans, and 4 ) no pesto (OK, that's just because I do not like pesto). They were wonderful! Thank you for the recipe.
I like this recipe, my parents were both carnivores so this is definitely a rebellious thing for me to make for those holiday family get togethers. I can passively let out my misguided rage for them shoving their beliefs down my throat. If I could recommend one addition to this recipe it would be bacon bits.
These were AMAZING!! I'm constantly making recipes and adding to them because I always feel something is lacking, not with this. Awesome as is! I was so happy to find a Veg. stuffed pepper recipe as most of them have meat and we are really cutting out eating much meat. Thank you!
