From TOH--“Here’s a speedy and satisfying version of traditional minestrone soup. The fun polka-dot shapes of the couscous, baby carrots and black beans give this stew its name.” -Teagan O'Toole, Boston, Massachusetts The editor's note states that barley may be used for the couscous. I will likely use broth instead of water.

Tasty & healthy! I would have used vegetable stock instead of water plus 3-4c of it. I used a 46oz can of tomato juice because I didn't have tomato soup. I also used baby spinach added at the end because I happened to have some. At first it was fabulous. When I went for seconds, the couscous had absorbed most of the liquid! A very good way to get veggies into your family on a cold, cold winter day! Made for 1/12 Veggie Swap.
