Vegetarian Polka Dot Stew

  • In a large saucepan, bring water to a boil. Stir in the couscous, carrots, tomato, onion and garlic. Bring to a boil.
  • Reduce heat; simmer, uncovered, for 10-15 minutes or until tender and water is absorbed.
  • Stir in the remaining ingredients; heat through. Sprinkle with cheese.

  1. Tasty & healthy! I would have used vegetable stock instead of water plus 3-4c of it. I used a 46oz can of tomato juice because I didn't have tomato soup. I also used baby spinach added at the end because I happened to have some. At first it was fabulous. When I went for seconds, the couscous had absorbed most of the liquid! A very good way to get veggies into your family on a cold, cold winter day! Made for 1/12 Veggie Swap.

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!! To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
