My husband and I enjoyed this very much! Wonderful smell while cooking. We didn't have seitan so I substituted extra firm tofu. We will have this again!

I made this recipe never having had Pho before, so I have no idea if it tasted the way Pho is supposed to taste, but it sure was good! Easy too! The next time I make it I will go to Chinatown for the star anise and I had to substitute the green chili with Korean red pepper since that's all I had handy. I also used extra firm tofu instead of seitan and fresh noodles which I added immediately prior to serving. I will definately make this again!

I have a copy of the cookbook that this recipe comes from and I've always wanted to try it. It was prepared as written except that I omitted the seitan and didn't use scallions and cilantro as DD doesn't care for them. The aroma while cooking was wonderful, however I think the flavours were a bit too exotic for us to enjoy this more. Not the fault of the recipe at all but rather our taste. Made for Newest Zaar Tag.
