Vegetarian (Or Vegan) Black Bean Chili

I cut this recipe out of the Philadelphia Inquirer years ago and have adjusted it to suit my tastes. I've made this often enough that I don't measure the spices but you should adjust them to your desired level of spiciness. My new favorite way to eat this chili is over baked sweet potatoes, topped with sour cream and Frank's Red Hot Sauce.

Nice vegetarian chili. I made it in the crockpot over the weekend and then froze it in individual serving sizes for lunches. Nice flavor, though the texture of the vegetarian ground beef after cooking all day in the crockpot was a tad rubbery. Nothing that turned me off, just something I might change next time I make it. I did not use fresh jalapenos, instead using rotel tomatoes and green chilis. Thanks for an easy make-ahead meal.

  1. Place all ingredients in a crock pot and stir well. Turn on low and cook for 6 -7 hours, stirring regularly. Serve with rice, nachos, potatoes or sweet potatoes. Top with shredded cheese, sour cream and/or Frank's Red Hot sauce.
