Kansiyé is a stew which is served with rice - this version uses lentils instead of beef. This is a delicious traditional dish in Guinea & is easy to make. Time to make doesn't include soaking time. Posted for ZWT 4.

Ididn't have the highest hopes for this recipe but wanted to try it as I'm on my own ZWT. It was very easy to make and quite tasty. I did find it stuck to the bottom of the pan--I must have had the heat too high--so a lower temp or nonstick pan would help. Didn't know if I should cook it covered or not, but did cover it. The recipe didn't specify when to add the baking soda or the vegetable stock cube, so I left them out. And I didn't think it needed to be served over rice. It was fine just plain. I might consider adding some crushed red pepper next time.
- 8 ounces green lentils
- 3 tablespoons oil
- 1 large onion, chopped
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon black pepper
- 1⁄8 teaspoon thyme
- 3 garlic cloves, minced
- 1 tablespoon parsley, finely chopped
- 1⁄8 teaspoon ground cloves
- 1 (8 ounce) can tomato sauce
- 2 1⁄2 cups water
- 1 vegetable stock cube
- 3 tablespoons creamy peanut butter
- 1⁄8 teaspoon bicarbonate of soda
- cooked rice, to serve

- Soak lentils in plenty of cold water for at least 2 hours. Rinse & drain,.
- Brown onion, salt, pepper, thyme, garlic, parsley and clove.
- Combine tomato sauce and 1 cup water with the stock cube, add to lentils mixture and stir well. Dilute peanut butter in remaining cup of water and add to mixture.
- Add bicarb of soda & cook in a covered pan, over medium heat for 1 hour, or until lentils are soft. You may need to add a little extra water / stock.
- Serve hot over the cooked rice.
