Vegetarian Cowboy Meatloaf

"This is originally from Cooking Light magazine. This is one of my husband's favourites, and he's not even vegetarian. I found another version of this recipe that suggested using uncooked, grated potato instead of the cooked potato. That's a time-saving method probably worth a try, because there is quite a lot of prep required for this recipe."

  • Preheat oven to 375 degrees F.
  • Saute onion and next 6 ingredients in oil in a large nonstick skillet for 3 minutes.
  • Stir in 1/4 cup barbecue sauce, potato, and the next 7 ingredients (potato through beans).
  • Spoon the potato mixture into a loaf pan coated with cooking spray. Bake for 30 minutes.
  • Brush 1/4 cup barbecue sauce over loaf, and sprinkle with cheese. Bake an additional 10 minutes or until done.

  2. This was yummy! Mine didn't stay together as a loaf very well, but it could be because I didn't let it cool very long before cutting AND I used refrigerated grated potatoes instead of mashed ones. The flavor is very nice, though; DH even shocked me by taking multiple servings. He usually complains when I make veg loaves!!
     
  3. Excellent! I used the premade mashed potatoes found in the cold food section of the grocery store. Made it pretty easy. 2 out of my 3 kids and my carnivour husband like it, too. Texture was a bit mushy, but the taste was great.

I was born and raised in the USA but now live in Melbourne, Australia. I have been here since 1999. My husband is Australian. We have two daughters (born May '05 and May '07) and a yellow Labrador.
